      I love to cook Swedish meatballs! I suppose all cooking is chemistry; food changes properties with heat. Water may boil off or proteins will denature (egg turning from clear to white). Have you ever accidently put red cabbage with egg, it turns the egg a blue/green color! Its a natural pH indicator so i think that means egg must be alkali. If you put vinegar on red cabbage it goes bright pink.
